Apple Salad

Toss fruits and veggies in a bowl with the nuts. In another smaller bowl, thoroughly mix the mayonnaise or tahini with the sweetener. Pour the dressing over the salad and toss well. Serve. Makes 2-3 servings.  |

Brush the oil on the cut side of the potatoes. Place the potatoes cut-side down over a medium grill or cut-side up about 8 inches from a broiler and cook until fork-tender, about 15 minutes, turning once.
Meanwhile, cook the bacon over medium heat in a large skillet. Drain on paper towels. Spoon off all but 1 tablespoon of the drippings from the pan and add the shallot or garlic. Reduce heat to low and cook
until tender but not brown, about 3 minutes. Add the vinegar and 1/4 cup water, scraping any browned bits from the skillet. Stir in the thyme and remove from heat. Crumble the bacon and add it to the sauce.
Pour over the potatoes quarters. Sprinkle with the cheese. |

Cajun Oven fries

Preheat oven to 450 degrees F. Cut potatoes into wedges. In a large bowl, combine oil, hot sauce, thyme, paprika, and cumin. Toss potatoes in dressing and spread out in a single layer on a nonstick cookie
sheet. Season wedges with salt and pepper and roast for 20 minutes, turning once. |

Fruit Sushi

Lay out the nori seaweed and spread a thin layer of rice over it, leaving about 1 inch on either end. Spread peanut butter over the rice, then lay apples and raisins on top in a straight line down the middle.
Starting at one end, roll the seaweed tightly. When you get to the end, wet the seaweed with your fingers dipped in water to make it stick. Slice the roll in 1/2 to 3/4-inch circles. Serve! |

Onion Rings

Mix all batter ingredients. The batter ought be somewhat runny, but not thick (experimentation might be required by adding or subtracting the amount of water to yield the desired result). Dredge raw onion
rings in flour, then dip in batter, then in bread crumbs (allow excess batter to drip away before coating with bread crumbs; I personally shake excess batter off). Gently toss the coated rings into preheated oil
(preheated to medium/medium-high setting) and fry until golden-yellow, then flip over and fry the other side until golden-yellow as well (if fried until golden light-brown they tend to be very crunchy, unless
that is desired). Remove from oil, place onto oil-absorbent paper towel, and allow to cool down slightly  |

Stuffed shells!

Boiled the large pasta shells for 10 minutes, then I steamed leaves of spinach. Then I combined Fat Free Ricotta cheese w/ the spinach and drained the shells. Then I stuffed the shells w/ the spinach mix,
preheated the oven to 350. Put the shells on a baking sheet and covered with Light Ragu and baked for 15 minutes. They are SOOOO good.  |
