CHOCOLATE SHEET CAKE

Preheat oven to 375 degrees. Spray 16 x 12 x 3/4 inch sheet pan with Pam. Set aside. Onto sheet of waxed paper, sift together flour, dry milk, sugar, cocoa, baking powder and baking soda. set aside. In a mixing bowl, combine remaining ingredients. Using electric mixer, beat sifted ingredients into buttermilk mixture beating until smooth. Pour batter into prepared pan and bake for 20 minutes until cake pulls away from sides of pan and cake tester inserted in center comes out clean. Let cake cool in pan for 5 minutes. Remove cake from pan and set on wire rack to cool.

PUMPKIN COFFEE CAKE

Heat oven to 350 degrees. Spray Bundt pan with spray. Beat sugar and margarine until fluffy. Mix in pumpkin, egg whites and water. Gradually add combined flour, soda, baking powder, 1 1/4 cups oats, raisins, and cinnamon. Mix well. Pour into Bundt pan and sprinkle with remaining 1/4 cup oats. Bake for 60 to 70 minutes or until wooden pick comes out clean. Cool for 10 minutes. Remove from pan. (Low cholesterol, no sodium.)

SUGARLESS APPLESAUCE CAKE

Combine raisins and fruit with water. Cook uncovered until soft and water is evaporated. Cool. Combine flour, soda, salt and spices. In bowl, combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and fruit mixture Stir into dry ingredients and blend thoroughly. Pour into greased 10-inch tube pan. Bake at 350 degrees for 35-40 minutes or until tests done. 125 calories per serving.
