Cheese Cake
LO CAL ORANGE CHIFFON CHEESE CAKEMake graham crust with 2 cups graham crumbs, 1 stick diet margarine, melted. Mix and press into bottom of 9-inch springform pan. Bake at 350 degrees for 8-10 minutes. Cool. Put juice into pan, sprinkle gelatin over juice, let soften 1 minute. Heat, stirring, until gelatin melts. Blend cream cheese and ricotta cheese in large bowl until smooth. Stir in Equal, add gelatin mixture to cheese mixture. Stir in chopped orange. Spoon into baked crust and spread evenly. Chill 6 hours or overnight. Garnish with orange sections. |

LOW CALORIE CHEESE CAKESpray 9 inch pie plate with Pam. Sprinkle side with half of the graham crackers, save remaining for garnish. Dissolve Jello in boiling water; pour into blender container. Add cottage cheese and creamed cheese; cover. Blend at medium speed scraping side down occasionally, about 2 minutes or until completely smooth. Pour into large bowl. Gently stir in whipped topping. Pour into pie plate. Smooth top and sprinkle on remaining graham crackers. Makes 8 servings. About 85 calories per serving without fruit. |

LOW FAT LEMON CHEESECAKESpray 9 inch pie plate with non stick cooking spray. Sprinkle side with half of graham cracker crumbs. Completely dissolve gelatin in the boiling water; pour into blender, add cottage cheese and cream cheese and cover. Blend at medium speed, scraping down sides occasionally about 2 minutes or until completely smooth. Pour into large bowl. Gently stir in Cool Whip until smooth. Pour into pie pan, sprinkle remaining graham cracker crumbs on top. Chill until set about 4 hours. Top with pie filling. |
