B.B.'S DOVE IN WINE SAUCE

Line dove breast in a deep cooking dish. Sprinkle with Lipton's soup mix. Mix the wine and the mushroom soup together and pour over top. Seal in foil. Cook slowly at 350 degrees for 3 1/2 hours or more.

BAKED DOVE

Put dove on wire rack over cookie sheet. Wrap bacon around cove, put a couple of slices of onion in cavity. Put foil on top of bacon. Wrapped cove breast. Bake in 300 degree oven for 30-45 minutes.

BRAISED DOVES

Melt butter and flour and seasonings. Brown the flour and slowly add water and lemon juice, stirring constantly to avoid lumping. Bring the mixture to a boil and pour it over doves. Cover baking dish. Cook in 325 degree oven until tender. These may also be cooked over low heat in a tight fitting skillet. Cook in this manner for a half hour or until doves are tender through.

CROCKED DOVE

Super Sprinkle doves which have been washed and dried thoroughly. Place in crock pot and add all other ingredients. Cover and cook 6-8 hours. Remove birds and thicken gravy if desired with a little flour and water mixture. Serve with wild rice or noodles. You can put this on in the morning and your dinner will be done and ready to serve when you get home. For a real quickie if you have a microwave oven, try this. Microwaves are great for cooking small quantities of birds and game. Things cook so fast, all the juices are sealed in.

DOVE AND RICE CASSEROLE

Brown dove in salad oil; remove from oil. Brown onion. Add garlic, lemon-pepper seasonings, rice, mushrooms, bouillon cube, lemon juice, sherry, salt, and pepper. Mix well. Spoon into glass baking dish; place dove on top. Bake at 350 degrees for about 1 hour. Serves 5.

DOVE BREASTS STROGANOFF

Place meat in a large baking dish; do not crowd. Dice and saute onion; mix with remaining ingredients except sour cream. Pour over meat. Cover lightly with foil. Bake at 325 degrees for 1 hour, turning occasionally. Add sour cream, stir. Bake uncovered 20 minutes. Serve over combined white and wild rice. Serves 6-8. You can add the rice to the dove breasts, and make a casserole.

DOVE IN WINE SAUCE

Season flour with salt, pepper, and paprika. Dip dove in milk, then in flour. Brown quickly in butter. Place in baking dish. Pour off 1/2 of drippings. In same skillet saute mushrooms and onions until golden brown. Add soup consomme and wine. Mix and pour over dove; cover. Bake at 250 degrees for 1 hour. Remove from oven. Stir in orange juice and serve. Wonderful with mashed potatoes, whole baby carrots, and salad. Serves 4.

DOVE PIE

Clean and split the doves; cover them with water. Add onion, parsley, and cloves; cook until tender. Remove the doves. Skim liquid; thickened with flour and butter. Season with salt and pepper. Remove from heat. Line a baking dish with 1/2 pastry. Place cooked birds in dish. Cover with gravy. Top with remaining pastry and bake at 350 degrees for 1 hour. 4-6 servings.
