POSSUM
APPLE-ROASTED OPOSSUMParboil a young, cleaned opossum until nearly tender in salted water. Stuff with any favorite dressing. Place opossum on rack in roaster, cover with strips of bacon. Into bottom of roaster pour 3 cups water in which have been dissolved 1 tablespoon each sugar and lemon juice. Bake at 350 degrees for about 2 hours. Drain all but about 1 cup liquid from pan. Surround opossum with pared, quartered apples; sprinkle apples with mixture of 1 cup brown sugar, 1 teaspoon grated lemon rind, 1 teaspoon cinnamon. Continue roasting for half an hour, or until opossum is tender. Serves 3-4. |

BAKED POSSUMPut Possum in 55 gallon drum and feed for 3 weeks (vegetables, grain, etc.). Shoot possum between the eyes (his brain is real small, but it's around there somewhere). Scald in 140 degree water with hickory ashes and green pine needles. Scrape hair with mason jar lid. Rub down liberally with salt and pepper. Place roasting rack in pan. 1 cup water and 1/4 cup wild turkey in bottom of pan. Slow cook 2 hours (medium possum) baste often. Remove top and brown 15 minutes. Slice and serve on sweet potatoes. Feeds one Hillbilly or 150-300 city folk. |

BAKED POSSUMAfter you skin and clean the possum, par boil it for 5 minutes in soda water. Then put the possum in a big covered roasting pan and cover it with water; add carrots, potatoes and onions; bake until the possum is tender, then throw the possum out to the dogs and eat the carrots, potatoes and onions. |

FRIED OPOSSUMress carefully, parboil, season with salt and pepper. Take up and slice in rather thin slices, dip in a batter and fry in lard or opossum fat until done. Batter: 1 c. milk Flour to make at thin batter Pinch of salt Pinch of soda Any of this batter that is left may be fried with the meat. Serve together. |

NATHAN'S POSSUM A LA BOARDPlace oak board on table. Put bread crumbs on it and place possum in middle of bread crumbs. Do not preheat oven. You want to delay the smell as long as possible. Cook 1 1/2 hours at 350 degrees - longer if extra large possum. Take out of oven. Place in zip-loc bag. Place in trash can and eat the oak board. It will be better than the possum. |

OPOSSUM STUFFINGBrown onion in fat. Add finely chopped opossum liver and cook until liver is tender. Add crumbs, a little red pepper, Worcestershire sauce, egg, salt, and water to moisten. |

POSSUM AND SWEET TATERSDress possum and remove all fat. Salt it inside and out. (Some cooks use a little sage too.) Place in baking dish with 2 cups of water. Cover and bake in slow oven (325 degrees) for one hour. Place sweet taters in pan along side the possum and cover. Bake until all is tender. |

ROAD KILLED POSSUMScrape up possum with spatula (shovel will do). Add all ingredients to #3 wash tub and boil until contents blend into an ???????. Strain all solid material. Apply liquid to any stubborn weeds. |
