BAKED DEER STEAK

Brown deer steak in oil. Remove steak and add onions. Brown until tender, remove. Add water and bouillon cubes. Bring to a boil. Thicken with cornstarch dissolved in 1/4 cup water. Salt and pepper to taste. Place steak, onions and gravy in covered casserole and bake at 350 degrees for 1 hour and 15 minutes.

BARBECUED DEER STEAKS

Cover steaks with milk; let stand 30 minutes. Remove from milk; add salt and pepper. Dredge in flour; brown in butter. Place layer of steaks in casserole; add layer of onion and barbecue sauce. Repeat layers until all steaks are used. Pour wine over steaks; cover and bake at 350 degrees for 1 hour.

CHICKEN FRIED DEER TENDERLOIN OR STEAK

Cut tenderloin pieces 1/2 inch thick. Pound until flat. Dip in 1 can evaporated milk (reserve milk). Roll in flour which has been seasoned to taste. Fry in oil until light brown. Serve with white gravy. Pour out all but 1/2 cup oil. Add 3 or 4 tablespoons flour, brown lightly; add water to reserved Pet milk to make 1 cup. Add to flour and cook over medium heat until thick.

COUNTRY STYLE VENISON STEAKS

One hour before broiling sprinkle both sides of steak generously and salt and pepper and add charcoal seasoning. Preheat skillet. Melt butter. Pan broil steaks on medium high heat for 3 to 5 minutes per side. Fry steaks separately or 2 at a time, don't over cook, use plenty of butter as venison is a lean meat. Serve while hot. Serves 6.

DEER STEAKS OR CHOPS

Marinate the meat in Adolph's meat marinade. Add a little garlic salt or Rave for about 3 hours. Wash off lightly and fry in a skillet with a couple slices of bacon. Brown and then slice onion on top and simmer for 45 minutes or until tender. Drain off excess grease before simmering. Serve with rice. Make gravy from the drippings if desired.

DEER TENDERLOIN

In flour put seasonings and mix well. Put deer meat in milk about 1 hour before you cook it. Put oil in frying pan and let get hot. Dredge meat in flour and put in pan to cook. Do not fry to fast. Cook and turn as needed. Doesn't need to cook too long. Drain.

FRIED VENISON STEAK

Trim venison of all fat. Dip in flour. Brown on both sides in hot oil. When brown, sprinkle onion soup mix and pepper over all and add water. Cover and cook 1/2 hour.
